Essential Ingredients for Your Snowball Cookies

One of the beauties of this recipe is its reliance on simple, accessible ingredients. You likely have most of these in your pantry right now! High-quality ingredients will always yield the best results, so choose your butter and nuts carefully for optimal flavor and texture.

Ingredients needed to make snowball cookies on a wooden table
  • Unsalted butter, softened: The foundation of any good shortbread cookie! Softened butter creams beautifully with sugar, creating that essential tender crumb. Ensure it’s at room temperature for best results – not melted, not cold.
  • Powdered sugar: Also known as confectioners’ sugar, this fine sugar is used both in the dough for its delicate texture and as the signature “snow” coating.
  • All-purpose flour: Provides structure to your cookies. Measure it correctly by spooning it into your measuring cup and leveling off.
  • Vanilla extract: A classic flavor enhancer that brings warmth and depth to the buttery base.
  • Kosher salt: Balances the sweetness and enhances all the other flavors. Don’t skip it!
  • (Optional) Pecans, finely chopped: These add a wonderful crunch and a rich, nutty flavor that is characteristic of traditional snowball cookies. We recommend Fisher’s Nuts Pecans for their quality.

Optional Additional Flavors: While classic snowball cookies are divine, feel free to experiment with other delightful additions. For a tropical twist, add a 1/4 cup of shredded coconut. During the holidays, chopped candy cane pieces can add a festive peppermint kick. Mini chocolate chips or dried cranberries offer bursts of sweetness and chewiness. If you prefer an even more distinct nutty flavor, try replacing the vanilla extract with almond extract – it complements the pecans beautifully and adds a sophisticated note.

How To Make Perfectly Baked Snowball Cookies in Your Air Fryer: A Step-by-Step Guide

Making these Air Fryer Snowball Cookies is a straightforward process, perfect for bakers of all skill levels. Follow these detailed steps to achieve perfectly tender, golden-brown cookies every time.

  1. Cream Butter and Sugar: In a large mixing bowl, combine the softened unsalted butter with 3/4 cup of powdered sugar. Beat these two ingredients together using an electric mixer on medium speed until the mixture is light, fluffy, and well combined. This creaming process incorporates air, contributing to the cookies’ delicate texture.

  2. Form the Dough: Once the butter and sugar are perfectly creamy, gradually add the all-purpose flour, vanilla extract, and kosher salt to the bowl. Continue mixing on low to medium speed for approximately one minute. Mix just until a soft, pliable dough forms, being careful not to overmix, which can result in tough cookies.

  3. Fold in Pecans: Using a rubber spatula, gently fold the finely chopped pecans into the dough until they are evenly distributed. This ensures every cookie has that delightful nutty flavor and texture. If you have nut allergies, simply omit the pecans for a delicious plain shortbread snowball.

  4. Portion and Shape Cookies: Use a small cookie scoop or a spoon to measure out portions of the dough. Then, roll each portion into neat, uniform balls, aiming for about 1 ½ inches in size. Consistent sizing ensures even cooking in the air fryer.

  5. Prepare for Air Frying: Line your air fryer basket with parchment paper to prevent sticking and make cleanup easier. Carefully place the cookie dough balls into the prepared air fryer basket, ensuring there’s about an inch of space between each cookie to allow for proper air circulation and even cooking. Do not overcrowd the basket; bake in batches if necessary.

  6. Air Fry to Perfection: Air fry the cookies at 350 degrees F (175°C) for 8-10 minutes. Keep an eye on them, as cooking times can vary slightly depending on your specific air fryer model and its wattage. The cookies are ready when they are lightly golden brown around the edges and set in the center. Once cooked, gently remove them from the air fryer and transfer them to a wire cooling rack to cool completely. Repeat with any remaining dough.

  7. Coat with Powdered Sugar: This is where the “snowball” magic happens! Once the cookies have cooled completely – this is crucial, as warm cookies will absorb the sugar or crumble – place them, a few at a time, into a bowl or a large Ziploc bag containing the remaining 1 cup of powdered sugar. Spoon the sugar over them or gently toss them until each cookie is thoroughly coated on all sides, resembling a fresh snowball. You might even give them a second coating for an extra snowy effect after about 15-20 minutes.

We typically make this recipe in our Cosori 5.8 qt. air fryer, which provides ample space for baking in batches. However, remember that air fryers vary significantly in size and wattage. You may need to adjust the cooking time by 1-2 minutes, either slightly increasing or decreasing it, based on your specific appliance to achieve that perfect golden hue.

Frequently Asked Questions About Air Fryer Snowball Cookies

Here are some common questions and helpful tips to ensure your Air Fryer Snowball Cookies are always a success:

Are there other toppings I can put on these cookies?

Absolutely! While the powdered sugar is iconic, these buttery cookies are a versatile canvas. For a touch of indulgence, drizzle them with melted chocolate, rich caramel sauce, or a decadent butterscotch. To make them even more festive and fun for any occasion, consider adding colorful sprinkles before the powdered sugar fully sets, or use a combination of different colored sugars for a vibrant display. A light dusting of finely grated citrus zest (lemon or orange) can also add a bright, fresh note.

How to store leftover cookies?

Proper storage is key to keeping your snowball cookies fresh and delicious. For short-term storage, place the cooled, powdered sugar-coated cookies in an airtight container or a resealable storage bag. They will stay fresh at room temperature on your kitchen counter for up to 4 days. To maintain their pristine “snowy” appearance, you might place a piece of parchment paper between layers of cookies if stacking. If you plan on keeping them longer, these cookies freeze beautifully. Simply arrange them in a single layer on a baking sheet to freeze solid, then transfer them to an airtight freezer-safe container or a zip-top freezer bag. They will keep well in the freezer for up to 2 months. Thaw at room temperature before serving.

How do I reheat frozen cookies?

Reheating frozen snowball cookies depends on whether they were baked or unbaked before freezing. If you’ve frozen previously cooked and coated cookies, remove them from their airtight container and allow them to thaw overnight in the refrigerator or at room temperature. They will be ready to eat once fully thawed, maintaining their soft texture. For a slightly warmed cookie, you can briefly pop them in the microwave for 10-15 seconds or in a preheated oven at 250°F (120°C) for a few minutes. If you froze raw dough balls, you can air fry them directly from the freezer. Simply place the frozen dough balls in your air fryer basket (still lined with parchment paper and spaced out) and air fry them for an additional couple of minutes compared to the original recipe’s cooking time, as they will need more time to cook through from a frozen state. Monitor closely for doneness.

Notes

Cooking Tips:
Be sure to let the cookies cool before coating them with powdered sugar. If they are still warm, they will easily crumble.
This recipe makes about 2 dozen cookies using a 1 1/2-inch scoop so it will make multiple batches of cookies.
I have tried this recipe with gluten-free flour and it works perfectly! Just substitute it 1:1 for all-purpose flour.
**If you have nut allergies, these cookies are just as amazing without the pecans.
