The Magic of Baked Alaska, Reimagined for Your Air Fryer

Traditional Baked Alaska is a show-stopping dessert, typically featuring layers of cake and ice cream, all encased in a fluffy, browned meringue. The beauty of this dessert lies in its delightful contrast: the scorching hot meringue exterior protects the icy cold interior from melting, creating a truly unique and “melt-in-your-mouth” experience with every bite. Our air fryer version maintains all the charm and deliciousness of the classic but significantly cuts down on prep and cook time, making it an accessible treat for home cooks.

You’ll absolutely adore this Air Fryer Brownie Baked Alaska recipe! It’s not just a classic dessert; it’s an elevated experience that delivers a symphony of textures and flavors. From the chewy brownie to the creamy ice cream and the crisp, sweet meringue, each component contributes to a truly memorable bite. This recipe is straightforward enough for a spontaneous dessert idea but elegant enough to serve as a grand finale at your next dinner party. It’s a testament to how the air fryer can transform traditional recipes into modern marvels.

Why Choose the Air Fryer for Your Baked Alaska?

The air fryer is more than just a gadget for crispy fries; it’s a versatile tool perfect for desserts! For Baked Alaska, it offers several key advantages:

  • Speed: The high heat circulation quickly browns and crisps the meringue in just 3-5 minutes, much faster than a conventional oven, which often requires preheating and longer cooking times.
  • Precision: The concentrated heat ensures an even golden-brown crust on the meringue without overcooking the ice cream inside.
  • Efficiency: No need to heat up your entire kitchen with a large oven, especially during warmer months. The air fryer keeps things cool and energy-efficient.
  • Perfect Texture: It creates that ideal crispy shell on the meringue while keeping it soft and airy underneath, protecting the creamy ice cream below.

Ingredients for Your Air Fryer Brownie Baked Alaska

Crafting this incredible dessert requires just a few simple ingredients. Quality matters here, as each component plays a crucial role in the final taste and texture. We’ll be using readily available items, so you won’t need to search far and wide.

  • Brownies: You’ll need about 4 pre-baked brownies. These can be homemade or store-bought, whatever is most convenient. The key is a firm, rich brownie that can hold its shape. You can bake your own Air Fryer Brownies or even Air Fryer Brownie Cookies for a delightful twist!
  • Ice Cream: One pint of your favorite ice cream. Vanilla is a classic choice, but feel free to experiment with flavors like chocolate, strawberry, or even a caramel swirl. We recommend a high-quality, dense ice cream for the best results, such as Tillamook Ice Cream.
  • Egg Whites: 2 large egg whites. Ensure these are at room temperature, as they will whip up to their fullest volume, creating a more stable and airy meringue. Separate them carefully to avoid any yolk contamination.
  • Granulated Sugar: 1/4 cup. This sweetens and stabilizes the meringue, contributing to its glossy finish.
  • Cream of Tartar: 1 teaspoon. A crucial ingredient for meringue, cream of tartar acts as a stabilizer, helping the egg whites hold their peaks and achieve that perfect stiff, glossy consistency.

How to Make Air Fryer Brownie Baked Alaska: Step-by-Step Guide

Follow these simple steps to create a stunning Air Fryer Brownie Baked Alaska that will be the talk of your next gathering!

  1. Prepare the Brownie Base:

Begin by cutting your brownies into individual portions, roughly 3×3 inches in size. While squares are traditional, feel free to get creative and use a round cookie cutter to make brownie circles for a more elegant presentation. Ensure the brownies are completely cooled and firm before moving on.

  2. Add the Ice Cream Dome:

Next, scoop a generous amount of your chosen ice cream onto the center of each brownie. Use the back of a spoon or a small spatula to gently shape the ice cream into a neat dome. The goal is to create a well-defined mound that will be completely encased by meringue. Once shaped, immediately place the brownies with their ice cream domes into the freezer. This is a critical step to ensure the ice cream stays frozen solid while you prepare the meringue topping, preventing premature melting in the air fryer. Allow them to freeze for at least 15-30 minutes, or until very firm.

  3. Whip the Meringue:

In a clean, medium-sized mixing bowl, preferably a stand mixer with a whisk attachment or a hand mixer, beat the room temperature egg whites. Start on medium speed and gradually increase to high. Continue beating until small, soft, glossy peaks begin to form. Once soft peaks appear, slowly and gradually add the granulated sugar, a tablespoon at a time, while the mixer is still running. Then, add the cream of tartar. Continue beating on high speed until the mixture becomes very thick, bright white, and forms stiff, glossy peaks. When you lift the whisk, the meringue should hold its shape firmly. This ensures a stable meringue that won’t weep or collapse.

  4. Coat with Meringue:

Carefully remove the firm brownie and ice cream units from the freezer. Working quickly, use a spatula, a wooden spoon, or even a piping bag with a star tip to spread generous swirls of meringue over each ice cream dome and brownie. Ensure the meringue completely coats the ice cream and extends down to meet the brownie on all sides. This meringue layer acts as an insulator, protecting the ice cream from the heat. Create decorative peaks and swirls for a beautiful finish.

  5. Prepare for Air Frying:

Line your air fryer basket with air fryer parchment paper, or if you prefer, use a small, oven-safe baking dish or ramekins that fit comfortably inside your air fryer. Carefully place each meringue-coated dessert into the prepared basket, ensuring they don’t touch each other to allow for even airflow. Do not overcrowd the basket; cook in batches if necessary.

  6. Air Fry to Perfection:

Preheat your air fryer to 400 degrees F (200 degrees C). Once preheated, air fry the desserts for 3-5 minutes. Keep a close eye on them; the exact time will depend on your air fryer model and how deeply golden you want the meringue. You’re looking for the meringue to be beautifully golden brown and firm to the touch. The high temperature ensures the exterior crisps up quickly without melting the ice cream inside.

  7. Serve Immediately or Store:

For the best experience, serve your Air Fryer Brownie Baked Alaska immediately to enjoy the contrast of warm, crispy meringue and cold, creamy ice cream. If you need to prepare them in advance or have leftovers, you can place them in the freezer to firm up the ice cream. However, note that freezing may cause the meringue to lose some of its crispness. A quick torch with a kitchen blow torch before serving can help revive the crisp exterior if desired.

I typically prepare this recipe using a Cosori 5.8 Quart Air Fryer. Please remember that cooking times can vary slightly depending on the specific model and wattage of your air fryer, so always keep a close watch on your meringue during the final step.

Pro Tips for the Best Air Fryer Brownie Baked Alaska

  • Super Cold Ice Cream: The colder your ice cream is when you apply the meringue, the longer it will resist melting in the air fryer. Don’t skip the freezer step!
  • Perfect Meringue Peaks: Don’t under-beat your egg whites. They should be firm and glossy. Stiff peaks are key to the meringue holding its shape and insulating the ice cream effectively.
  • Complete Coverage: Ensure the ice cream is entirely covered by meringue. Any exposed ice cream will melt rapidly in the air fryer.
  • Don’t Overcrowd: Air fryers work best when air can circulate freely. Cook your Baked Alaska portions in batches if they don’t fit comfortably in a single layer.
  • Watch Carefully: The meringue browns quickly. Stay near your air fryer and check frequently after 2-3 minutes to prevent burning.

Air Fryer Brownie Baked Alaska: Frequently Asked Questions

What can I use besides a brownie for the base?

The beauty of this recipe is its versatility! Instead of a brownie, you can use a sturdy piece of pound cake, sponge cake, or even a thick cookie. For a refreshing summer flavor, consider a chewy lemon brownie or a crisp shortbread cookie under the meringue with a fruit-flavored ice cream. The main requirement is that the base needs to be firm enough to support the ice cream and meringue without crumbling. You can easily make Air Fryer Brownies or Air Fryer Brownie Cookies to use for this recipe as well, ensuring a completely air-fried dessert!

Can I make Air Fryer Brownie Baked Alaska ahead of time?

Yes, you absolutely can! If you want to prepare these decadent treats in advance, complete all steps up to the point of air frying, then store them in an airtight container in the freezer. When you’re ready to serve, simply place them in the preheated air fryer as directed. For meringues that have lost some crunch in the freezer, a quick pass with a kitchen torch just before serving can restore that beautiful, crispy exterior and slightly warm the meringue, contrasting perfectly with the frozen interior.

What if my meringue isn’t browning properly?

Ensure your air fryer is fully preheated to 400°F (200°C). Sometimes air fryers can vary in their actual temperature. If the meringue isn’t browning, try increasing the temperature by 10-20 degrees F for the last minute, or placing the desserts closer to the heating element if your air fryer allows. Always keep a very close watch to prevent burning.

Can I use different ice cream flavors?

Absolutely! This recipe is fantastic for customization. While vanilla is a classic pairing, feel free to experiment with any ice cream flavor you love. Chocolate, mint chip, coffee, strawberry, or even a rich butter pecan can create exciting new flavor profiles when combined with the brownie and meringue. Just ensure the ice cream is firm before covering it with meringue.

Instructions

  • Cut brownies into squares, about 3×3 inches in size. You can leave them in square shape, or cut into brownie circles, if you prefer.
  • Next, scoop your favorite ice cream over the brownie, and then shape into an ice cream dome. Place brownie and ice cream in freezer while you make the meringue topping.
  • In a medium bowl, beat the egg whites until small glossy peaks form. Slowly add the white sugar and cream of tartar to the egg white mixture. Keep beating until a glossy stiff peak forms and the mixture thickens.
  • Remove brownie and ice cream from freezer. Use a spatula or wooden spoon to spread swirls of meringue, to completely coat the ice cream and brownie, covering on all sides, leaving peaks of meringue.
  • Place each dessert in the air fryer basket, lined with air fryer parchment paper, a small baking dish or in small ramekins that will fit in your air fryer basket.
  • Air fry at 400 degrees F for 3-5 minutes, until the meringue is golden brown and firm.
  • Serve immediately or freeze. (Freezing may make the meringue lose some of it’s crisp)

Notes

Ice cream needs to be very firm. Keep ice cream covered brownie in the freezer for 15-30 minutes if necessary, before covering with meringue.
