The magic of the air fryer lies in its ability to circulate super-heated air, cooking food in a fraction of the time and using significantly less oil than traditional frying methods. When it comes to delicate proteins like fish, this means a perfectly cooked interior and an incredibly crispy exterior without the heavy grease. The panko breadcrumb coating is crucial here, providing that extra layer of texture that elevates this dish from good to absolutely phenomenal.

If you’re a fan of succulent, flaky white fish, prepare to make this your new go-to recipe. Many agree that air-fried fish offers a superior experience to deep-fried versions. Not only does the air fryer’s frying basket keep your delicate fish fillets perfectly contained and prevent them from breaking apart, but it also eliminates the traditional mess and lingering oil smell associated with deep-fat frying. This makes for an effortless cooking process and an even easier cleanup.

This recipe uses a simple list of ingredients to create maximum flavor and crispiness. You’ll likely have many of these on hand already!

  • Fish fillets (such as cod, tilapia, haddock, or mahi-mahi)
  • Panko breadcrumbs (key for extra crispiness!)
  • Egg (for binding the breading)
  • All-purpose flour (for the first dredge)
  • Ground black pepper
  • Paprika
  • Lemon pepper seasoning
  • Avocado oil spray (or other high-smoke point oil)
breadcrumbs, flour, seasonings, avocado spray, egg, and fish on a table.

This is truly one of the easiest air fryer recipes you’ll make. For the best, most consistently crispy results, follow these simple steps for perfectly cooked fish every time.

How to make crispy fish in the air fryer:

Achieving perfectly crispy, flaky fish in your air fryer is straightforward. Follow these steps for an amazing meal!

  1. Prepare the Fish and Seasoned Flour.

If using frozen fish, ensure the fillets are fully defrosted by placing them in the refrigerator for 6-8 hours, or using a quick thaw method. Pat the fish fillets thoroughly dry with paper towels to remove excess moisture – this is key for crispiness! In a rimmed bowl or shallow dish, combine the flour, ground black pepper, lemon pepper, and paprika. Mix these seasonings well to ensure an even distribution.

  2. Prepare the Egg Wash.

In a separate small bowl, whisk the egg until the yolk and white are fully combined. This will act as the binder for your breadcrumbs.

  3. Set up the Panko Station.

Pour the panko breadcrumbs into another small rimmed plate or shallow dish. Panko offers a superior crispness compared to regular breadcrumbs, so don’t skip this!

  4. Bread the Fish Fillets.

Take each fish fillet and first dip it into the seasoned flour, ensuring it’s lightly but evenly coated. Shake off any excess. Next, dip the floured fillet into the whisked egg, letting any extra drip off. Finally, place the fillet into the panko breadcrumbs, gently pressing to make sure they are fully and generously coated on all sides. Repeat for all fillets.

  5. Prepare for Air Frying.

Lightly spray the breaded fillets with avocado oil. This helps achieve that beautiful golden-brown color and extra crispiness. Preheat your air fryer to 390 degrees Fahrenheit (199°C). Once preheated, arrange the coated fish fillets in the air fryer basket in a single layer. Do not overcrowd the basket; cook in batches if necessary to allow proper air circulation.

  6. Air Fry to Perfection.

Air fry the fish at 390 degrees Fahrenheit (199°C) for 12-15 minutes. For even cooking and maximum crispiness, remember to flip the fish halfway through the cooking time. The fish is done when it’s golden brown, crispy, and flakes easily with a fork. An internal temperature of 145°F (63°C) is ideal for cooked fish.

  7. Serve and Enjoy.

Carefully remove the crispy fish from the air fryer basket. Serve immediately with a generous dollop of tartar sauce, a squeeze of fresh lemon juice, and your favorite accompanying side dishes for a complete and satisfying meal.

NOTE: I typically prepare this recipe in my Cosori 5.8 qt. air fryer or my 6.8 quart air fryer. Keep in mind that air fryer models, sizes, and wattages can vary, so you might need to adjust the cooking time by 1-2 minutes to achieve perfect results in your specific appliance. Always check for doneness.

Tips for the Crispiest Air Fryer Fish

  • **Pat Fish Dry:** Excess moisture is the enemy of crispiness. Always pat your fish fillets completely dry with paper towels before breading.
  • **Use Panko Breadcrumbs:** Panko breadcrumbs are larger and flakier than regular breadcrumbs, which creates a lighter, airier, and significantly crispier coating.
  • **Don’t Overcrowd:** Cook fish in a single layer in the air fryer basket. Overcrowding prevents hot air from circulating effectively, leading to steamed rather than crispy results. Cook in batches if necessary.
  • **Spray with Oil:** A light spray of avocado oil (or another high-smoke point oil) on the breaded fish before cooking and halfway through helps achieve a beautiful golden color and a truly crispy exterior.
  • **Preheat Your Air Fryer:** Just like an oven, preheating your air fryer ensures the fish starts cooking immediately at the right temperature, promoting a better crust.
  • **Flip Halfway:** Flipping the fish ensures both sides get direct exposure to the circulating hot air, resulting in even crispness.
  • **Check Internal Temperature:** For food safety and optimal texture, cook fish until it reaches an internal temperature of 145°F (63°C). It should also flake easily with a fork.

Flavorful Variations

This basic air fryer fish recipe is incredibly versatile! You can easily customize it to your taste with different seasonings and coatings:

  • **Seasoning Blends:** Beyond the classic lemon pepper and paprika, try adding garlic powder, onion powder, a pinch of cayenne pepper for a kick, dried dill, oregano, or a pre-made spice blend like Cajun seasoning, Old Bay, or Italian seasoning to your flour mixture. A little fresh lemon zest can also be added directly to the panko breadcrumbs for an extra bright citrus note.
  • **Alternative Coatings:** While panko is king for crispiness, you could experiment with a mix of cornmeal and flour for a different texture, or even crushed cornflakes for a super crunchy coating.
  • **Herbs:** Freshly chopped parsley, chives, or dill can be mixed into the panko for added freshness and color.

How to Serve Crispy Air Fryer Fish

With such a short cook time, you’ll be serving and enjoying this delicious fish in no time at all. It’s fantastic on its own, but pairing it with the right sides can turn it into a truly memorable meal. A squeeze of fresh lemon juice over the top just before serving is highly recommended to brighten the flavors.

Consider these popular serving suggestions:

  • **Classic Pairings:** Serve with a generous portion of crispy French fries, air fryer potato wedges, or sweet potato fries for a homemade “fish and chips” experience.
  • **Fresh & Light:** A simple green salad, coleslaw, or a vibrant pasta salad makes a great counterpoint to the richness of the fish.
  • **Vegetable Sides:** Roasted broccoli, asparagus, green beans, or corn on the cob complement the fish beautifully.
  • **Sauces:** Don’t forget your favorite dipping sauces! Tartar sauce is a classic, but sriracha mayo, a creamy dill sauce, or even a simple squeeze of fresh lime juice can elevate the dish.
  • **Tacos or Sandwiches:** Flake the cooked fish and use it as a flavorful filling for fish tacos with crunchy slaw and a drizzle of crema, or create a delicious fish sandwich on a toasted bun with lettuce and tomato.

How to Store and Reheat Leftovers

Crispy cod, or any type of air-fried fish, is undoubtedly best enjoyed hot and fresh, right out of the air fryer. This is when its exterior is at its crispiest and the interior is most tender. However, that doesn’t mean you can’t enjoy leftovers! While reheating may not fully replicate that initial crunch factor, with the right method, you can still have a delicious meal.

If you find yourself with leftover white fish fillets, allow them to cool down completely to room temperature before storing. This prevents condensation from forming and making the coating soggy. Once cooled, place them in an airtight container and refrigerate for up to 2-3 days.

To reheat for another easy weeknight dinner, the air fryer is your best friend! Place the cold fish fillets back into a preheated air fryer at 350°F (175°C) for 5-8 minutes, or until they are heated all the way through and the coating has regained some of its crispiness. Avoid microwaving, as this will result in soggy fish. For best results, consider lightly spraying with a bit more oil before reheating.

Frequently Asked Questions About Air Fryer Fish

Can I cut my fresh fillets into different sizes?

Absolutely! When it comes to cooking fish, you have the flexibility to cut the fillets into any size you prefer. Whether you want smaller fish sticks, larger portions, or even bite-sized pieces for tacos, it’s entirely up to you. Just be aware that smaller pieces of fish will naturally cook faster than larger ones. It’s important to monitor them closely and adjust cooking times accordingly to prevent overcooking, which can lead to dry fish.

What is the best type of fish to cook in the air fryer for this recipe?

For a recipe like this, featuring a crispy breaded coating, firm white fish fillets are generally the most popular and yield excellent results. Classic choices include **tilapia**, **cod**, **haddock**, **mahi-mahi**, and **pollock**. These types of fish have a mild flavor and a firm texture that holds up well to the breading and the air frying process, resulting in beautifully flaky interiors. You can, however, use any type of fresh or fully thawed frozen fish fillets that you enjoy – simply choose the best fish flavor and taste that you like best!

Can I use frozen fish directly without thawing?

For the absolute best results and crispiest coating, it’s highly recommended to thaw your fish fillets completely before breading and air frying. Frozen fish will release a lot of moisture as it cooks, which can make your breading soggy and prevent it from getting truly crispy. If you must cook from frozen, skip the breading and simply spray with oil and season, then air fry for a longer duration, adding 5-10 minutes to the total cook time, and ensuring you flip them multiple times.

How do I make sure the coating is extra crispy?

Several factors contribute to an extra crispy coating:

  1. **Pat dry:** Always pat your fish fillets completely dry before dredging.
  2. **Panko:** Use panko breadcrumbs, as they provide a much crunchier texture than regular breadcrumbs.
  3. **Oil Spray:** Don’t skip the oil spray! A light coating of avocado oil or another neutral oil helps the breading crisp up and turn golden.
  4. **Single Layer:** Ensure fish is cooked in a single layer in the air fryer basket to allow hot air to circulate evenly around each piece.
  5. **Preheat:** Always preheat your air fryer so the coating starts crisping immediately.
