What is Acorn Squash?

Acorn squash, aptly named for its distinctive acorn-like shape, is a versatile winter squash belonging to the same family as zucchini. It boasts a naturally mild, slightly sweet, and buttery taste, often compared to the comforting sweetness of sweet potatoes. Its delicate flavor and tender texture make it an excellent choice for a variety of dishes. While it shines as a healthy and satisfying side dish for almost any meal, its inherent sweetness also allows it to be enjoyed on its own as a delightful snack or even a light dessert. It’s particularly popular during the fall and winter months, offering a comforting and nutritious addition to your table.

Why the Air Fryer is Perfect for Acorn Squash

The air fryer has revolutionized how we prepare many vegetables, and acorn squash is no exception. Its unique circulating hot air technology creates a crispy exterior while maintaining a tender, moist interior, mimicking the results of traditional roasting with significantly less time and oil. For acorn squash, this means achieving that coveted caramelized surface and a perfectly cooked, fork-tender flesh in a fraction of the time it would take in a conventional oven. This method not only speeds up dinner preparation but also uses less energy, making it a highly efficient and convenient way to enjoy your favorite winter squash.

Simple Ingredients for Air Fryer Acorn Squash

You’ll be delighted by how few ingredients are needed to create this spectacular dish. Here’s what you’ll need to gather:

Acorn squash cut in half, butter brown sugar, cinnamon and salt on a wood cutting board
  • Acorn Squash: One medium-sized acorn squash (roughly 2 pounds) is perfect for this recipe. Look for a squash that feels heavy for its size and has a deep, uniform color without soft spots.
  • Unsalted Butter: We prefer unsalted butter to control the overall saltiness of the dish. If you’re looking for a dairy-free alternative or prefer a lighter option, a good quality olive oil can be used instead.
  • Brown Sugar: This ingredient is key to achieving that delightful gentle sweetness and helps create a beautiful caramelized glaze as it melts and blends with the butter and squash. Dark brown sugar will give a deeper molasses flavor, while light brown sugar offers a milder sweetness.
  • Cinnamon: Ground cinnamon adds a wonderful warmth and autumnal spice that perfectly complements the squash’s natural flavors. For an even richer seasonal profile, consider adding a tiny pinch of nutmeg or a dash of pumpkin spice.
  • Kosher Salt: Just a small amount of kosher salt is crucial. It brightens all the flavors and provides that irresistible sweet and salty contrast that makes this dish so addictive.

How to Choose the Best Acorn Squash

Selecting the right acorn squash ensures the best flavor and texture for your air fryer recipe. Look for squash that are:

  • Heavy for their size: This indicates good moisture content, leading to a more tender result.
  • Dark green in color: While some varieties have orange or yellow patches, a predominantly dark green color suggests ripeness. Avoid those with too much orange, which can indicate over-ripeness and a stringier texture.
  • Free of soft spots or blemishes: These can be signs of spoilage. A few minor surface imperfections are fine, but avoid deep cuts or large soft areas.
  • Dull, not shiny: A shiny skin often means the squash was picked too early.

How to Make Air Fryer Acorn Squash: Step-by-Step Guide

Preparing this delicious acorn squash in your air fryer is incredibly straightforward. Follow these simple steps for perfectly cooked, flavorful results every time.

STEP 1: Prepare Your Air Fryer Basket

To prevent sticking and ensure easy cleanup, lightly spray your air fryer basket with a non-stick cooking spray. Alternatively, you can line the basket with air fryer parchment paper. This is especially helpful if you’re concerned about the sugar mixture melting and sticking.

STEP 2: Create the Sweet Spice Mixture

In a small bowl, combine the brown sugar, cinnamon, and salt. Stir these ingredients thoroughly until they are well mixed. Set this flavorful sugar and spice blend aside. If you plan to add pecans, this is the perfect time to mix them into this delicious seasoning blend.

STEP 3: Prepare the Acorn Squash

Begin by rinsing the acorn squash thoroughly under cold water, then pat it completely dry with a paper towel. Place the squash on a stable cutting surface. Using a sharp knife, carefully cut the squash in half lengthwise, from stem to base. Once cut, use a sturdy spoon to scoop out all the seeds and stringy bits from the center of each half. Discard the seeds or save them for roasting later!

STEP 4: Butter and Season the Squash

Take your softened butter and generously spread or brush it over the interior flesh of each acorn squash half. Once the surface is coated, place any remaining butter (or a fresh slice) into the hollowed-out center of each squash half. Finally, spoon the prepared brown sugar and spice mixture evenly over the buttered surface and into the center cavity. This combination will melt down to create a luscious, caramelized glaze as it cooks.

STEP 5: Air Fry to Perfection

Carefully place the prepared acorn squash halves into the air fryer basket, ensuring they fit in a single layer without overcrowding. Depending on the size of your squash and air fryer, you may need to cook them in batches. Air fry the acorn squash at 400°F (200°C) for 20-25 minutes. The squash is done when it’s beautifully golden brown, and the flesh is easily pierced with a fork (fork-tender). Once cooked, carefully remove the squash from the air fryer and allow it to cool slightly before serving. The melted butter and brown sugar will be hot and syrupy!

I personally achieve fantastic results with my Cosori Air Fryer. Remember that cooking times can vary by 2-5 minutes depending on your specific air fryer model and its wattage. Always check for fork-tenderness to ensure perfect results.

Delicious Acorn Squash Variations

While the classic sweet and savory preparation is a winner, acorn squash is incredibly versatile. Experiment with these variations to suit your taste:

  • Change the Shape: Instead of serving squash halves, try cutting the squash into 1-inch thick slices or even bite-sized cubes before seasoning and air frying. This can reduce cooking time and offer a different presentation, perfect for mixing into salads or grain bowls.
  • Savory Version: For those who prefer a less sweet profile, swap the brown sugar for savory seasonings. Think garlic powder, onion powder, a pinch of red pepper flakes for heat, smoked paprika, or a simple yet elegant combination of kosher salt and freshly ground black pepper. Fresh herbs like rosemary or thyme also pair wonderfully.
  • Nuts and Sweet Drizzle: Elevate the classic recipe by drizzling the cooked squash with a touch of honey or maple syrup just before serving. A sprinkle of chopped pecans, walnuts, or even candied walnuts adds a delightful crunch and extra layer of flavor.
  • Dessert Delight: Transform this wholesome vegetable into a decadent dessert. After cooking, top with a generous dollop of whipped cream, a scoop of vanilla ice cream, or a sprinkle of toasted marshmallows. A drizzle of caramel sauce can also be heavenly!
  • Spicy Kick: For a touch of heat, sprinkle a tiny amount of cayenne pepper or a dash of your favorite hot sauce into the butter mixture before cooking. This adds an unexpected and exciting dimension to the squash.

Expert Tips for Perfect Air Fryer Acorn Squash

Achieving perfectly roasted acorn squash in your air fryer is simple with a few helpful tips:

  • Safety First When Cutting: Acorn squash can be tough to cut. Always use a sharp knife and place the squash on a stable cutting board. If it’s wobbly, you can carefully cut a small strip off the bottom to create a flat base before cutting it in half lengthwise. This provides stability and prevents accidental slips. While you can also make acorn squash slices, cutting it in halves allows the butter and seasonings to pool perfectly in the center, creating that delicious caramelized filling.
  • Avoid Overcrowding: For the best results, ensure your squash halves are placed in a single layer in the air fryer basket. Overcrowding can lead to uneven cooking and steaming instead of roasting. If necessary, cook in batches.
  • For a Single Serving: If you’re cooking for one, simply use a smaller acorn squash and halve the recipe ingredients. Adjust cooking time slightly if your squash is particularly small.
  • Ensure Even Cooking: Depending on your air fryer model, you might find that rotating the squash halves halfway through the cooking time helps achieve more even browning and tenderness.
  • Check for Doneness: The best way to know if your acorn squash is cooked through is by gently piercing the flesh with a fork. It should slide in easily with minimal resistance, indicating it’s fork-tender.

Frequently Asked Questions About Air Fryer Acorn Squash

How do I store and reheat leftovers?

Storing leftover acorn squash is easy. Simply transfer any remaining squash halves or pieces into an airtight container. Store it in the refrigerator for up to 3 days. When you’re ready to enjoy it again, reheat the squash in your air fryer basket at 350°F (175°C) for 3-5 minutes, or until it is thoroughly warmed through and tender. This method helps maintain its delicious texture.

Is Acorn Squash Healthy?

Absolutely! Beyond its delicious taste, acorn squash offers a bounty of health benefits. It’s naturally low in calories and packed with essential nutrients and powerful antioxidants. Rich in Vitamin C, it supports immune health, while its generous content of potassium and magnesium contributes to heart health and muscle function. With a good amount of dietary fiber, it aids in digestion and helps keep you feeling full. The addition of healthy fats and protein makes this a truly wholesome and satisfying side dish. You can find detailed nutritional information, including protein and fiber estimates, at the bottom of this recipe card.

Can you eat the skin of acorn squash?

Yes, you certainly can! Unlike some other squashes, the skin of acorn squash becomes quite soft and edible once it’s cooked, especially when roasted or air fried to tenderness. Many people enjoy eating the skin, as it adds a slightly chewy texture and extra nutrients. If you prefer not to eat it, the softened skin is also incredibly easy to peel away from the flesh with a fork or spoon after cooking. You can simply scoop out the delicious insides, leaving the skin behind.

Equipment

  • 1 Air Fryer

Ingredients

  • 1
    medium-sized acorn squash,
    about 2 pounds

  • 2
    tablespoons
    unsalted butter,
    softened

  • 2
    tablespoons
    brown sugar

  • 1/2
    teaspoon
    cinnamon

  • 1/4
    teaspoon
    salt

Optional: Drizzle with a touch of honey or maple syrup and chopped pecans

Instructions

  • To prepare the food basket, lightly spray the basket with cooking spray, or line basket with air fryer parchment paper.
  • In a small bowl, combine the brown sugar, cinnamon, and salt. Stir to mix together, then set aside. (If using pecans, add them to this mixture.)
  • Rinse and pat dry the squash. Then, use a sharp knife and cut the squash in half lengthwise and use a sturdy spoon to remove the seeds.
  • Once seeds are removed, spread the butter over the top of each slice of squash, and then place leftover butter slice in the center of the acorn. Top with the brown sugar mixture.
  • Place the acorn halves in air fryer basket. Air Fry at 400 degrees for 20-25 minutes, until fork tender. Remove from oven and allow to cool slightly before serving.

Notes

Depending on your air fryer basket size, you may only be able to cook one squash piece at a time. I try to get small acorn squash to medium size squash for this air-fryer acorn squash recipe.

You should be able to fit both slices inside the basket. I love acorn squash because it has a sweeter taste than other varieties. The size and color don’t really matter – but if you can lean towards the smaller size, it will help them cook evenly when air fried.

Feel free to add more spices if you want to make a delicious side dish with a bolder flavor.

If necessary, you can cut a small strip off the bottom of each slice so they don’t rotate or tip over while cooking.
