Ingredients You’ll Need for Air Fryer Cowboy Casserole:

Crafting this delicious cowboy casserole is simple with a few pantry staples and fresh ingredients. Here’s what you’ll need to gather:

  • Lean Ground Beef: We recommend using 90% lean ground beef to minimize the amount of grease you’ll need to drain, resulting in a lighter, less oily casserole.
  • Whole Kernel Corn: Be sure to drain the canned corn thoroughly. You can opt for sweet corn for a touch of sweetness or regular whole kernel corn, depending on your preference.
  • Condensed Cream of Chicken Soup: This forms the creamy base of our casserole. If you don’t have cream of chicken soup on hand, condensed cream of mushroom soup makes an excellent alternative, offering a rich, earthy flavor.
  • Shredded Cheddar Cheese: A generous amount of shredded cheddar cheese adds incredible flavor and creates that desirable gooey topping. Sharp cheddar cheese elevates the taste, but any variety of shredded cheese you enjoy, such as Monterey Jack or a Colby-Jack blend, would be delicious.
  • Milk: A splash of milk helps to thin out the casserole mixture, ensuring it has the perfect creamy consistency without being too dense.
  • Sour Cream: For an extra layer of tanginess and creaminess that balances the rich flavors. Greek yogurt can be used as a lighter substitute if desired.
  • Onion Powder: Adds a foundational aromatic flavor without the texture of diced onions, perfect for those who prefer a smoother consistency.
  • Garlic Powder: A must-have for depth of flavor, complementing the savory beef.
  • Paprika: Provides a mild, sweet peppery note and a beautiful color. Smoked paprika is a fantastic option if you want to add a subtle smoky dimension to your casserole.
  • Ground Black Pepper: To season the mixture to taste, adding a gentle kick.
  • Tater Tots: The star topping! Frozen tater tots are ideal for achieving that coveted crispy exterior in the air fryer, providing a delightful textural contrast to the creamy filling.

How to Make Air Fryer Cowboy Casserole

Making this delightful Air Fryer Cowboy Casserole is incredibly straightforward. With minimal prep time, you’ll be able to follow these simple step-by-step directions to create a mouthwatering meal that everyone will love. The air fryer works its magic, ensuring a perfectly cooked and crispy casserole every time.

  1. Prepare the Beef Mixture: In a large skillet, cook and crumble the lean ground beef over medium heat until it’s entirely browned and no longer pink. Make sure to break it into small pieces for even cooking. Once cooked, thoroughly drain any excess grease from the ground meat. This crucial step prevents the casserole from becoming overly greasy.
  2. Ground beef cooked in a skillet with two clear bowls, one with corn and the second bowl with cream of soup, and the round plate showing the spices.

  3. Combine Casserole Filling: To the cooked beef in the skillet, stir in the drained corn, condensed cream of chicken soup, ½ cup of the shredded cheddar cheese, milk, sour cream, onion powder, garlic powder, paprika, and ground black pepper. Mix everything thoroughly until all ingredients are well combined and the mixture is smooth and creamy.

  4. Assemble in Baking Dish: Preheat your air fryer to 350° Fahrenheit (175°C). While it preheats, lightly grease a baking dish that is specifically designed to fit inside your air fryer basket. Spread 1 cup of frozen Tater Tots evenly across the bottom of the greased dish.

  5. Layer the Casserole: Carefully spoon the seasoned ground beef mixture over the layer of tater tots in the baking dish. Spread it out evenly. Then, arrange the remaining 1 cup of frozen Tater Tots on top of the beef mixture in a single, even layer. This ensures maximum crispiness.

  6. Air Fry for the First Bake: Carefully place the baking dish into your preheated air fryer. Cook, uncovered, for approximately 15-18 minutes, or until the casserole is bubbly around the edges and the tater tots begin to turn golden brown and crispy.

  7. Add Final Cheese and Finish Cooking: Once the casserole is bubbly and the tots are crisp, carefully remove the dish from the air fryer. Sprinkle the remaining ½ cup of shredded cheese evenly over the top of the casserole. Return the dish to the air fryer and cook for an additional 2 minutes at 350° Fahrenheit (175°C), or until the cheese is beautifully melted and bubbly.

For this recipe, I typically use my Cosori 5.8 qt. air fryer or a 6.8 quart air fryer. It’s important to remember that air fryer cooking times can vary slightly depending on the specific model, size, and wattage of your appliance. Always keep an eye on your casserole during the cooking process and be prepared to adjust the cooking time by 1-2 minutes as needed to achieve that ideal bubbly, golden-brown finish.

Delicious Variations to Customize Your Cowboy Casserole

One of the best things about this Air Fryer Cowboy Casserole is how adaptable it is! Feel free to experiment with these variations to suit your family’s tastes or to use up ingredients you have on hand:

  • Add Beans: For a heartier, more chili-like flavor, consider stirring in a can of drained beans into your beef mixture. Great options include chili beans (for an extra kick), red kidney beans, pinto beans, or even black beans. This adds fiber and protein, making the meal even more substantial.
  • Chicken Stock for Thinning: If you find the meat mixture a bit too thick for your liking, you can add a small amount of chicken stock (a tablespoon or two) to achieve a smoother consistency. This can also add an extra layer of savory flavor.
  • Boost with Extra Veggies: Getting vegetables into kids’ diets can be a challenge, and this casserole offers a fantastic opportunity! Fold in some finely diced red bell pepper or green bell pepper with the corn. You could also add some frozen peas or carrots, thawed and drained, for extra nutrition and color.
  • Explore Different Meat Mixtures: While ground beef is traditional, you can easily swap it out. To reduce calories or fat, use ground turkey or ground chicken. For a spicier twist, mix in a tablespoon or two of taco seasoning or chili powder with the beef as it cooks. You could also use a combination of ground beef and sausage for a richer flavor profile.
  • Cheese Alternatives: Don’t limit yourself to cheddar! Pepper Jack cheese will add a spicy kick, while a Mexican cheese blend will bring a different flavor profile. Even a sprinkle of Parmesan on top could be interesting!

Top Tips for a Perfect Air Fryer Cowboy Casserole

Achieving a perfectly cooked and crispy cowboy casserole in your air fryer is simple with a few key techniques:

  • Thoroughly Cook and Drain Beef: Before adding it to the casserole dish, ensure your ground beef mixture is cooked through on the stovetop until no pink remains. Crucially, break up the meat into fine crumbles as it cooks to ensure even browning. Once cooked, thoroughly drain any excess grease. Skipping this step will result in an excessively greasy casserole, detracting from its deliciousness.
  • Prepare Your Corn: A can of whole kernel corn works perfectly, just remember to drain it well. If you opt for frozen corn, it’s best to cook it first in the microwave or on the stovetop and then drain any liquid before incorporating it into the beef mixture. This prevents excess moisture from making your casserole watery.
  • Preheat Your Air Fryer: Always preheat your air fryer to the recommended temperature before placing the casserole inside. This helps ensure even cooking and promotes that desirable crispy texture on the tater tots from the very beginning.
  • Single Layer Tater Tots: For maximum crispiness, arrange the tater tots on top of the casserole in a single, even layer. Avoid pushing them down into the creamy mixture, as they will absorb moisture and become soggy. Stacking them on top of each other will also prevent them from cooking evenly and achieving that beautiful golden-brown crisp.
  • Choose the Right Baking Dish: Make sure the baking dish you use fits comfortably in your air fryer basket, allowing for proper air circulation around it. This is essential for the air fryer to cook the casserole efficiently and achieve crispy results.

What to Serve with Your Cowboy Casserole

This Air Fryer Cowboy Casserole is truly a meal in itself, packed with protein, vegetables, and those satisfying tater tots. You don’t necessarily need a side dish to feel full and content. However, if you’re looking to round out your meal or simply love having options, a crisp, fresh side salad with a light vinaigrette dressing would be a wonderful accompaniment. It adds a refreshing contrast to the rich flavors of the casserole. For an even more rustic feel, you could serve it with some warm cornbread or a side of steamed green beans.

How to Store Leftovers

The good news is that this hearty cowboy casserole often yields delicious leftovers, perfect for quick meals the next day! To store, ensure the casserole has cooled completely to room temperature. Once cooled, transfer it to an airtight container or cover the baking dish tightly with aluminum foil or plastic wrap. Store it in the refrigerator, and it will remain fresh and delicious for 2-3 days. Reheat individual portions in the microwave or air fryer until warmed through.

How to Freeze Cowboy Casserole

Did you know this delightful dinner can be frozen for future enjoyment? You actually have two convenient options when it comes to freezing your Air Fryer Cowboy Casserole, making it a fantastic make-ahead meal:

  • Freezing Unbaked Casserole: If you want to prepare ahead, follow the recipe instructions up to the point where you don’t bake it. Assemble the entire tater tot casserole in a freezer-safe baking dish, ensuring it’s suitable for both the freezer and air fryer. Cover it tightly with an airtight lid or several layers of plastic wrap followed by aluminum foil. Label with the date and freeze for up to 3 months. When you’re ready to cook, thaw it in the refrigerator overnight, then bake as directed, potentially adding a few extra minutes to the cooking time if it’s still slightly frozen.
  • Freezing Cooked Casserole: If you’ve already cooked this easy weeknight meal and have leftovers you want to save, allow the casserole to cool completely. Divide it into individual portions or store the entire remaining casserole in an airtight, freezer-safe container. Cover it well to prevent freezer burn. Freeze for up to 3 months. To reheat, thaw in the refrigerator, then warm in the air fryer or oven until heated through and crispy.

Frequently Asked Questions About Cowboy Casserole

What goes well with tater tot casserole?

Tater tot casserole is a hearty and complete meal on its own, featuring meat, vegetables, and potatoes, so you genuinely don’t need many side dishes. However, if you’re planning a more elaborate meal or simply want to balance the richness, a light and refreshing side salad is an excellent choice. You could also offer a simple vegetable side like steamed green beans or broccoli, or some warm cornbread for an extra touch of comfort food goodness.

How do you make frozen tater tots crispy in the air fryer?

Achieving perfectly crispy tater tots in this Air Fryer Cowboy Casserole is key to its appeal! The secret lies in a few crucial steps. First, ensure your air fryer is fully preheated to the recommended temperature. Second, arrange the frozen tater tots in a single, even layer on top of the casserole mixture. Avoid overlapping them or pushing them down into the moist filling, as this will prevent them from crisping up. The circulating hot air of the air fryer needs to reach all sides of the tots to create that desired golden-brown, crunchy texture. Give them space to “breathe” and crisp up beautifully.

How do you get tater tots to stick together?

You want the tater tots on top of your casserole to stick together slightly, forming a cohesive, crispy crust that adds to the visual appeal and texture. The good news is that as long as you arrange them closely but without significant overlapping, they will naturally adhere to one another as they cook and become golden. The heat from the air fryer, combined with the slight softening of the potatoes and the melting cheese that’s added towards the end, helps them bind together, creating a satisfying and attractive topping.

Can I prepare Air Fryer Cowboy Casserole ahead of time?

Yes, you can absolutely prepare this cowboy casserole ahead of time, which makes it perfect for meal prepping or busy weeknights. You can assemble the entire casserole, including the tater tot layers, in your baking dish and then cover it tightly with plastic wrap. Store it in the refrigerator for up to 24 hours. When you’re ready to cook, simply remove it from the fridge while the air fryer preheats, then proceed with the cooking instructions. You might need to add a few extra minutes to the initial cooking time since it will be starting from a colder temperature.

Can I make this recipe in a regular oven instead of an air fryer?

While this recipe is optimized for the air fryer’s crispy results, you can certainly make a delicious Cowboy Casserole in a traditional oven. After assembling the casserole in an oven-safe dish, bake it in a preheated oven at 375°F (190°C) for about 25-30 minutes, or until the casserole is bubbly and the tater tots are golden brown and crispy. Add the final cheese for the last 5 minutes of baking, or until melted. Cooking times may vary, so keep an eye on it!
