Ingredients for Zucchini Fries

Crafting these perfectly crispy air fryer zucchini fries requires just a handful of simple ingredients you likely already have on hand. The fresh zucchini is the star, complemented by a seasoned breading that provides that satisfying crunch and a burst of flavor. Here’s what you’ll need:

Zucchini, breadcrumbs, parmesan cheese, flour, eggs, and seasonings measured on a white marble table.
  • fresh zucchini: Two medium zucchinis typically yield enough fries for four people, making this a budget-friendly option.
  • all-purpose flour: Forms the initial dry coating, helping the egg adhere properly.
  • Italian seasoning: A blend of herbs like oregano, basil, thyme, and rosemary for classic flavor.
  • garlic powder: Adds a savory depth that enhances the overall taste.
  • kosher salt: Essential for seasoning and bringing out the natural flavors of the zucchini.
  • eggs: Act as a binder, creating the perfect surface for the breadcrumbs to stick.
  • panko bread crumbs: The secret to extra crispy fries, thanks to their light, airy, and flaky texture.
  • grated parmesan cheese: Contributes a savory, salty, and cheesy flavor, along with an extra layer of crispness.

Step-by-Step Directions to Make Zucchini Fries

Follow these simple steps to create your own batch of perfectly crispy air fryer zucchini fries:

STEP 1: Prepare the Zucchini
Begin by thoroughly rinsing your fresh zucchini under cold water. Pat them completely dry with paper towels to remove any excess moisture, which is crucial for achieving crispiness. Using a sharp knife, carefully cut the zucchini into uniform sticks, aiming for pieces about 4-5 inches long and ½ inch thick. Consistency in size will ensure even cooking.

STEP 2: Set Up Breading Stations
Arrange three separate, shallow bowls or dishes – this setup makes the dipping process much easier. In the first bowl, combine the all-purpose flour, Italian seasoning, garlic powder, and kosher salt. Stir these ingredients together until well mixed.

STEP 3: Prepare Wet & Dry Coatings
In the second bowl, vigorously whisk the eggs until the yolks and whites are fully combined. In the third bowl, mix together the panko breadcrumbs and grated Parmesan cheese, ensuring they are evenly distributed.

STEP 4: Coat the Zucchini Sticks
Take each zucchini stick and first dredge it thoroughly in the flour mixture, shaking off any excess. Next, dip it into the whisked eggs, ensuring it’s fully coated. Finally, press the egg-coated stick firmly into the cheese and breadcrumb mixture, ensuring a thick, even layer of coating all around.

STEP 5: Air Fry to Perfection
Once all your zucchini pieces are coated, arrange them in a single layer in a lightly sprayed air fryer basket. Avoid stacking or overlapping to ensure maximum crispiness. Preheat your air fryer to 380°F (193°C) and then air fry the zucchini for 8-10 minutes. Halfway through the cooking time, give the basket a good shake or flip the fries to ensure even browning and a perfectly crispy texture on all sides. Continue cooking until they are beautifully golden brown and crunchy.

Expert Tips for the Best Zucchini Fries Every Time

To ensure your air fryer zucchini fries turn out perfectly crispy and delicious, consider these expert tips:

  • Uniform Slicing is Key: Achieving perfectly uniform slices is vital for even cooking. Irregularly sized pieces can lead to some being undercooked and soggy while others burn. Take your time to cut them into sticks of approximately 4-5 inches in length and ½ inch thickness. Trim off any uneven ends to maximize consistency.
  • Pat Zucchini Thoroughly Dry: Zucchini contains a high amount of water. After rinsing and cutting, it’s absolutely crucial to pat the zucchini sticks as dry as possible with paper towels. Excess moisture is the enemy of crispiness and can lead to soggy fries.
  • Prevent Sticking in the Basket: To ensure your fries don’t stick and for easier cleanup, always lightly spray your air fryer basket with nonstick cooking spray or olive oil spray. Alternatively, you can use air fryer parchment paper liners designed for your specific model.
  • Don’t Overcrowd the Air Fryer: For optimal crispiness, arrange the fries in a single layer in the air fryer basket. Overcrowding traps moisture and steams the fries instead of air frying them, resulting in a less crispy texture. If necessary, cook your zucchini fries in multiple batches.
  • Shake or Toss for Even Cooking: During the air frying process, make sure to shake the basket or use tongs to flip the fries about halfway through. This ensures both sides cook evenly, leading to a consistent golden brown color and crispy texture all around.
  • Adjust for Your Air Fryer Model: Air fryers can vary significantly in wattage and performance. While 380°F for 8-10 minutes is a good starting point (I make these in my Cosori air fryer), you might need to adjust the cooking time by a minute or two, either more or less, based on your specific appliance. Always check for desired crispiness.
  • Preheat Your Air Fryer: Just like a traditional oven, preheating your air fryer ensures that the fries start cooking immediately at the right temperature, promoting a more even and consistent crisp.

Delicious Variations to Try

While this classic air fryer zucchini fries recipe is perfect as is, feel free to get creative and experiment with these delicious variations:

  • Seasoned Breadcrumbs: To save a little prep time, you can swap the plain panko breadcrumbs and separate seasonings for pre-seasoned Italian breadcrumbs or even pre-seasoned panko breadcrumbs. For a different texture, try crushing crackers or making your own seasoned breadcrumbs from air fryer croutons.
  • Gluten-Free Option: Easily make these fries gluten-free by using gluten-free breadcrumbs. For an alternative coating, you can substitute the regular all-purpose flour with almond flour or a gluten-free all-purpose flour blend.
  • Assorted Dipping Sauces: The right dipping sauce can elevate your zucchini fries! Serve them with classic marinara sauce, creamy ranch dressing, tangy blue cheese dressing, or a spicy sriracha mayo. Don’t be afraid to experiment with your personal favorites – there’s truly no wrong option when it comes to dipping.
  • Add a Spicy Kick: If you love a bit of heat, sprinkle in some cayenne pepper or chili powder to the flour mixture for an extra pop of flavor. For a smoky heat, a pinch of smoked paprika works wonders too.
  • Explore Different Seasoning Blends: Beyond Italian seasoning, you can customize the flavor profile with various spice blends. Try taco seasoning for a Tex-Mex twist, ranch seasoning for a creamy herby flavor, Cajun seasoning for a bold, spicy kick, or individual herbs like dried thyme or rosemary for a more sophisticated, savory profile.
  • Cheese Alternatives: If you’re looking for a dairy-free option, nutritional yeast makes an excellent healthy alternative to Parmesan cheese, providing a cheesy flavor without the dairy. You can also experiment with other finely grated hard cheeses like Pecorino Romano or even a sharp cheddar for a different cheesy note.
  • Different Cutting Styles: While sticks are classic, you can also cut your zucchini into spears for a chunkier fry, or thin rounds for crispy zucchini chips. Adjust cooking time slightly for different thicknesses.

Storage and Reheating Zucchini Fries

These air fryer zucchini fries are undoubtedly at their best when enjoyed fresh, straight from the air fryer. However, if you happen to have leftovers, they can be stored and reheated for later enjoyment:

  • Storage: Allow any leftover zucchini fries to cool completely to room temperature. Then, transfer them to an airtight container and store them in the refrigerator for up to 3-4 days. Proper storage is key to maintaining their quality.
  • Reheating: To bring back their delicious crispiness, reheating in the air fryer is highly recommended. Preheat your air fryer to 380°F (193°C). Place the leftover fries in a single layer in the air fryer basket and cook for 3-5 minutes, or until they are thoroughly heated through and have regained their desired crunchy texture. Avoid the microwave, as it will make them soggy.

Frequently Asked Questions (FAQs)

How do I prevent my zucchini from being soggy?

The key to crispy air fryer zucchini fries is to minimize moisture. After rinsing and cutting, generously pat the zucchini sticks dry with paper towels to remove as much excess water as possible before coating them. Also, avoid overcrowding your air fryer basket, as this can steam the zucchini instead of crisping it.

Do I have to cut them into strips?

Not at all! While the “fry” shape is popular, you can certainly cut the zucchini into other forms. Zucchini spears, or even thin zucchini slices (like chips), work wonderfully. Just be mindful that different shapes and thicknesses might require slight adjustments to the cooking time to achieve the desired crispness.

Can I use yellow zucchini instead of green zucchini?

Absolutely! While green zucchini is commonly used, yellow zucchini makes a fantastic substitute for these fries. Yellow zucchini is similar in flavor, though sometimes a tad sweeter, and works just as well with this recipe. It might even add a vibrant pop of color to your plate!

Do I need to peel the zucchini before I cut zucchini into fries?

For recipes that save time and maximize nutrients, I typically don’t peel the zucchini. The skin is thin and perfectly edible, and it adds fiber and a nice color. However, if you prefer, you can easily peel them first without significantly altering the outcome of the fries.

Can I bake these zucchini fries instead of air frying?

Yes, you can! While the air fryer provides superior crispiness with less oil, you can bake them in a conventional oven. Preheat your oven to 400°F (200°C). Arrange the coated zucchini in a single layer on a parchment-lined baking sheet and bake for 15-20 minutes, flipping halfway, until golden brown and crispy.

Equipment

  • 1 Air Fryer

Ingredients

  • 2
    medium
    zucchini

  • 1/2
    cup
    all purpose flour

  • 1
    tablespoon
    Italian seasoning

  • 1
    teaspoon
    garlic powder

  • 1/2
    teaspoon
    kosher salt

  • 2
    large
    eggs

  • 1
    cup
    panko bread crumbs

  • 1/3
    cup
    grated parmesan cheese

Instructions

  • Rinse and then pat zucchini dry. Using a sharp knife, cut the zucchini into sticks, about 4-5 inches long, and ½ inch thick.
  • Set up three separate bowls for dipping, shallow dishes will be easiest. In the first bowl, add the flour, Italian seasoning, garlic powder, and salt. Stir together.
  • In the second bowl, whisk together the eggs. And in the third bowl, mix together the breadcrumbs and parmesan cheese.
  • Coat the zucchini sticks in the flour, then dip them into the whisked eggs, and finally into the cheese and bread crumb mixture.
  • After coating the zucchini pieces, place them into a lightly sprayed air fryer basket. Once all of the zucchini has been coated and placed in the air fryer, air fry zucchini at 380 degrees F for 8-10 minutes until golden brown and crispy.

Notes

Slice the zucchini as evenly, and uniform sized as possible. Equal-sized pieces will help them cook evenly. Trim any uneven ends or slices.

Lightly spray the basket with nonstick cooking spray, olive oil spray, or use air fryer parchment paper liner so the fries don’t stick to the basket.

Place the fries in a single layer, without stacking or overlapping. Make the fries in batches if necessary. Shake or toss the fries during the air frying process, so both sides of the fries are able to cook.

I make these in my Cosori air fryer. Some air fryers have different wattages, so cooking time may need to be adjusted by a 1-2 minutes.
